Put quite simply an iPhone backup file is a copy of the data on your iPhone. What are iPhone backup files for?

Transferring data from one device to another
Important information to note:
If you were to restore a device using a backup from a different Apple device the (for example, restoring an iPhone from an iPad backup file), not all data will be transferred. While contacts, messages and notes will be copied over, media files such ad photos, voice memos, message attachments and other types of app data will not transfer.
